The combined mot wt of the subunits is about 68,000. Each subunit is a single polypeptide chain caontaining 128 amino acid residues with alanine at the N-terminal, glutamic acid at the C-terminal, and a carbohydrate moiety attached at the asoaraginyl residue, position 17.
Avidin has a very high affinity for the D-biotin . Each of the four subunits of avidinbind one biotin molecule.
